Flapjacks Au Currant!

Sorry about the slap-dash state of this post.  I really didn't plan this. I really didn't plan on baking flapjacks but I had a sudden realisation that we didn't have a cookie or cake in the house!  Unheard of and totally unacceptable! 



I needed to bake something quick and all the ingredients had to come from the store cupboard...Flapjacks!   So lets get to it, we've no time to waste.

Preheat the oven to 350F/180C.  Line a square baking tin with baking paper and we are ready to go.

In a large sauce pan and over a low heat melt the following ingredients:

3/4 cup (150 grams) butter
1/2 cup (75 grams) soft brown sugar
3 heaping Tablespoons golden syrup (Karo syrup should work, too)

Remove the pan from the heat and stir in:

1/2 cup (50 grams) currants
2 1/2 cups (250 grams) old fashioned oats 


Pour this mixture into the prepared baking tin, spreading evenly to the edges. 
Bake for 20 -25 minutes or until the edges start to take on a light golden colour.



Remove the pan from the oven and let the flapjacks cool in the pan for about 10 minutes.  Cut into 12 squares but do not remove the flapjacks until they are completely cool.  

That's it!  Store the flapjacks in an airtight container.  Currant Flapjacks are easy and quick to make and very easy to eat!
